Veg Cheese Sandwich
Veg cheese sandwich – This is a Mumbai version, the iconic street style sandwich, layered with green chutney, a lot of veggies, and cheese. A good choice for breakfast, snack or even lunch box. This is also a good way to sneak veggies into your kid’s diet.
The green chutney used in this veg cheese sandwich is the regular one made with mint, coriander, and lime juice. Also for veggies, I have used cucumber, tomato, onion, and boiled potato. Capsicum and boiled beetroot can also be used. Adjust the spices as per your tastebud. As mine is not very spicy. You can grill this or toast whatever you prefer. It goes best with green chutney or tomato ketchup and a hot cup of tea.

Veg Cheese Mumbai Style Sandwich

INGREDIENTS:

For the green chutney

  • A handful of coriander leaves
  • A handful of mint leaves
  • 1 teaspoon lime juice
  • 1 garlic
  • 1/2 inch ginger
  • 1 deseeded green chili
  • 1/4 teaspoon black salt
  • 1/4 teaspoon salt

For the sandwiches

  • 2 white bread slices
  • 2 tablespoons of butter
  • 1 slice of cheese
  • 2 tablespoons green chutney
  • 5-6  thin boiled potato slices
  • 5-6 thin tomato slices
  • 5-6 thin onion slices
  • 5-6 thin cucumber slices
  • 1/4 teaspoon black salt
  • 1/4 teaspoon freshly crushed black pepper
  • 1/4 teaspoon freshly roasted cumin powder

 

INSTRUCTIONS: 

To prepare the Green Chutney

  • Blend all of the ingredients written under green chutney together in a blender until smooth and set aside. Try adding water as less as possible.

To assemble the Veg cheese sandwich

  • Take the white bread slices and spread a layer of butter, followed by a layer of green chutney on one side of both the pieces of bread.
  • On one bread, put a layer of potato slices, followed by tomato slices. Now sprinkle some black salt, roasted cumin powder, and black pepper powder.
  • Place the cheese slice followed by a layer of onion slices and a layer of cucumber slices.
  • Again sprinkle a pinch of black salt, roasted cumin, and black pepper powder.
  • Now place the other bread slice. Just put the chutney side down.
  • Spread butter on the outer layer of each bread and grill or toast until perfection.

  2. Chutney and cheese is my favorite combination in a sandwich. The cheese oozing out makes it so tempting. A great way to get kids also to enjoy vegetables as a cheese sandwich.
