Semiya upma with vegetables is a quick, savory breakfast loaded with colorful veggies. The best part of this recipe is that it is simple to make and tastes amazing. The most fulfilling breakfast. Even a¬†good recipe for lunch box too. Here I have added carrots, french beans, and capsicum. But you can add vegetables as per your choice. So let’s get into the recipe.

INGREDIENTS:

For cooking the vermicelli

1 teaspoon oil
1 cup vermicelli/semiya
Water 3 cups

For upma

1 tablespoon oil
1 teaspoon black mustard seeds
1 teaspoon whole without skin urad dal
9-10 curry leaves
1-2 slit green chilies
1 teaspoon finely chopped ginger
2 tablespoons finely chopped onion
2 tablespoons finely chopped tomato
2 tablespoons finely chopped capsicum
2 tablespoons finely chopped carrot
2 tablespoons finely chopped french beans
1/3 teaspoon turmeric powder
Salt to taste

INSTRUCTIONS:

  • Firstly heat a pan. When the pan is hot enough add a teaspoon oil. Then add vermicelli/semiya. Stir continuously on a low to medium flame for 2 minutes or until the vermicelli slightly changes its color. Remove from flame and transfer it to a plate and set it aside.
  • Boil water in a pan. Once the water starts boiling add the roasted vermicelli. Give it a mix. Cook the vermicelli for 2 minutes or until they become soft but not mushy. Then remove from flame, drain all the water and set aside.
  • Heat oil in a pan. Once the oil becomes hot, add mustard seeds. After the mustard seeds start to crackle add urad dal. Stir until the urad dal changes its color. Add green chili and curry leaves.
  • Add finely chopped ginger and stir for some seconds. Add finely chopped onion. Stir on a medium flame for 1-2 minutes or until the onions loose moisture.
  • Add chopped tomato, salt, and turmeric powder. Stir for a minute or so.
  • Now add all the finely chopped vegetables (capsicum, carrot, french beans). Give a good stir. Keep the flame in medium. Cover the lid and cook for 2 minutes. Remember to keep the veggies slightly crunchy. So do not overcook.
  • Add the cooked vermicelli. Gently mix everything together. Stir carefully or the vermicelli will be broken.
  • Remove from flame and semiya upma with vegetables is ready to serve. Serve hot.
