Lauki ki sabzi with mustard paste

Lauki ki sabzi with mustard paste is a simple, vegetarian side dish made with lauki/bottle guard.  The water content of this nutritious veggie is very high and has an excellent cooling effect. Thus it is very good for summer. Since childhood, I am a big fan of vegetables. My father used to go to the market every morning to buy fresh vegetables and fish. So I grew up eating a lot of veggies and Lauki is one among them.  This one is a light, satisfying, semi-dry recipe. Which goes best with rice and roti.


  • 1/2 kg lauki/ bottle guard
  • 2 tablespoons mustard oil
  • 1 teaspoon panch phodan
  • 1-2 broken dry red chili 
  • 6-7 slightly crushed garlic cloves 
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon mustard paste


  • Wash the lauki. Peeled the skin and chopped it. 
  • Heat mustard oil in a pan. Add panch phodan. Let them splutter. Add broken dry red chili and followed by slightly crushed garlic. Stir until the garlic turns slightly golden brown. 
  • Add chopped lauki. Followed by salt and turmeric. Stir well. As lauki contains enough water. So adjust salt accordingly.
  • Cover and cook on low to medium flame until the veggies get cooked. 
  • Add mustard paste. Again cover the lid and cook for another 5 minutes. It should be in a semi-dry form. 
  • Once it is done. Remove from flame and serve hot.
