Rabri malpua with jaggery recipe is a sweet dish wherein malpuas or the Indian fried pancakes are made with rabri/sweet thickened milk and then dipped in the jaggery syrup. The malpuas are not only soft and fluffy from inside but also taste delicious. Can be served as a sweet or dessert. Serve these by adding some chopped nuts on top and these are definitely loved by everyone. So let’s make the recipe.

INGREDIENTS:

For batter

  • 1-liter milk
  • 3-4 tablespoons maida/all purpose flour
  • 1 teaspoon suji/rawa/semolina
  • 4 tablespoons grated jaggery
  • 1 teaspoon crushed dry roasted fennel seeds
  • 1/2 teaspoon cardamom powder

For syrup

  • 1.5 cups of grated jaggery
  • 1 cup water
  • 1/2 teaspoon cardamom powder
  • Oil/ghee for frying

for garnishing

  •  Chopped nuts

Step-1

Boil milk in a thick bottomed pan. Stir continuously. Cook until the milk becomes thick. Add grated jaggery and cardamom powder. Stir again till the jaggery melt completely. Turn off the flame and let it for cooling down.

Step-2

Take rabri in a bowl. Add crushed fennel. Slowly add maida and suji. To get soft and fluffy malpuas, whisk really well for 4-5 minutes. There should not be any lumps in the batter and the batter must be of pouring consistency. Then leave it for 30 minutes.

Step-3

Heat water by adding jaggery and cardamom powder in a pan. Stir continuously until it becomes slightly thick. No need to make it one string consistency. 

Step-4

Heat oil/ghee in a pan. Once the oil turns hot enough pour a ladleful of batter into the hot oil. It will float and puff up like a ball on oil. Fry until both sides turn golden brown.

Step-5

Keep the malpuas on a kitchen towel to drain excess oil.

Step-6

Then add them to the hot jaggery syrup. Leave there for 10-15 minutes. 

Step-7

Rabri malpua with jaggery is ready to serve. Serve hot by garnishing with some chopped nuts. You can even serve chilled.
