Aloo dum or dum aloo is a very popular recipe across India. It normally serves as a side dish. It goes well with rice, chapati, paratha, and naan. Ingredients which I have used for this recipe are mentioned below.


4 boiled potatoes cut in big cubes
2 chopped onion
1 tbsp ginger n garlic paste
4 tbsp cooking oil
1 chopped tomato
1 tsp salt
1/4th tsp sugar
1 bay leaf
1 tsp turmeric powder
1 tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder
1/2 tsp Kasuri methi
2 tbsp chopped coriander leaves
2 slit green chili
1/2 cup warm water


  • Heat oil in a kadhai/pan. Add 1/4th tsp sugar. Wait till sugar color changes. 
  • Add bay leaf and chopped onion. Saute the onion until slightly golden brown. Add turmeric and red chili powder. Saute for some seconds or so. 
  • Add ginger and garlic paste. Saute for 1-2 min. Next, add chopped tomato and salt.
  • Saute in medium to low flame till oil separates. 
  • Add cumin powder, coriander powder, 1/2 teaspoon garam masala powder, Kasuri methi and slitted green chili. Saute for another 1 minute. 
  • Add boiled potato cubes and saute for 2 minutes in medium flame. 
  • At this point add 1/2 cup of warm water. Cover the lid and cook on low flame for 10 minutes Check in between. 
  • Lastly, add chopped coriander leaves and rest garam masala powder. Mix well and serve hot.
